However, the optimum extraction of the soluble solids within the coffee bean lies in the line of 18-22%. The remainder of soluble solids is not desirable for a great cup of coffee. They dissolve slower than the desirable soluble solids.

The surface area of coffee beans is directly proportional to the brewing time

By grinding the coffee finely, one raises the surface area. This stands the odds of resulting in over-extraction.

Therefore, finely ground coffee need not be brewed for a long time, while larger coffee bean particles may need to be brewed for longer for the perfect cup of coffee. This is because larger coffee particles take longer to release the flavors while the smaller particles do so quicker.
