Coffee beans are bigger than the ground coffee that we use for making a cup of coffee. The beans are ground for getting powdered or processed coffee. This can be directly used as a raw material for creating a great cup of coffee.

With grinding, all volatile flavors and aromatics that are locked within the coffee bean are exposed. This renders a major influence over the coffee that is brewed.
Even if one puts a coffee bean in a glass of water, there will be some extraction. But it will take longer.
Now, when you chop a new coffee bean into two, it doubles the surface area. The rate of extraction correspondingly will increase, when immersed in water.
Beyond grind size, another important factor that renders an influence over the extraction is the number of particles immersed. A higher number of particles imply a greater surface area, which translates to more extraction.
A higher rate of extraction, however, is not ideal in all cases. Among all components of a coffee bean, 30% can be dissolved in water. However, the optimum extraction of the soluble solids within the coffee bean lies in the line of 18-22%. The remainder of soluble solids is not desirable for a great cup of coffee. They dissolve slower than the desirable soluble solids.
The surface area of coffee beans is directly proportional to the brewing time
By grinding the coffee finely, one raises the surface area. This stands the odds of resulting in over-extraction.
Therefore, finely ground coffee need not be brewed for a long time, while larger coffee bean particles may need to be brewed for longer for the perfect cup of coffee. This is because larger coffee particles take longer to release the flavors while the smaller particles do so quicker.
